A Few Facts About Food

     Broccoli contains many vitamins, as well as cancer-fighting phytochemicals, anti-estrogenic indoles, fiber, calcium and magnesium.

     Raisins are great source of iron, which helps blood transport oxygen to tissues and cells.


     Grapefruit is the best diet food; can speed up your metabolism and lower your insulin levels.

     Pinto Beans are excellent source of folate, which helps protect against heart disease and reduces the risk of birth defects.

     Apples, the pectin in apples increases satiety and therefore can help with weight loss; also a great source of vitamins and antioxidants.

     Arugula contains isothiocyanates which can help prevent cancers.

     Canola oil is a cooking oil that is very rich in the two healthiest fats: monounsaturated and omega-3 fatty acids.

     Celery is rich in phthalides, which are compounds that lower blood pressure and cholesterol.

     Cranberry juice is an amazing fruit juice which helps fighting bladder infections by preventing harmful bacteria from growing.

     Pumpkin is loaded with vitamin A which is important for your vision; and fiber.

Fried Chicken with Cumberland Sauce

An oven fried chicken recipe with currant jelly and orange sauce with ginger.

Ingredients:

  • 3 1/2 pounds chicken pieces
  • 1/2 teaspoon salt
  • dash pepper
  • 1/2 teaspoon paprika
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter
  • .
  • Cumberland Sauce:
  • 3/4 cup currant jelly
  • 1/4 cup orange juice
  • 1 teaspoon dry mustard
  • 1/4 teaspoon ground ginger

Preparation:

Preheat oven to 375°. Grease a shallow 2-quart baking dish. Wash chicken and pat dry. In a food storage bag, combine salt, pepper, paprika, and flour. Shake chicken in bag, a few pieces at a time, until well-coated. Arrange chicken in the baking dish; drizzle with the melted butter.
Cover dish with foil; bake for 30 minutes. Meanwhile, combine sauce ingredients in a small saucepan; bring to a boil. Remove from heat; stir until smooth. After first 30 minutes of baking time, remove cover from chicken. Pour sauce over chicken and bake 30 minutes longer, basting occasionally.
