An oven fried chicken recipe with currant jelly and orange sauce with ginger.
Ingredients:
- 3 1/2 pounds chicken pieces
- 1/2 teaspoon salt
- dash pepper
- 1/2 teaspoon paprika
- 1/4 cup all-purpose flour
- 1/4 cup melted butter

- Cumberland Sauce:
- 3/4 cup currant jelly
- 1/4 cup orange juice
- 1 teaspoon dry mustard
- 1/4 teaspoon ground ginger
Preparation:
Preheat oven to 375°. Grease a shallow 2-quart baking dish. Wash chicken and pat dry. In a food storage bag, combine salt, pepper, paprika, and flour. Shake chicken in bag, a few pieces at a time, until well-coated. Arrange chicken in the baking dish; drizzle with the melted butter.Cover dish with foil; bake for 30 minutes. Meanwhile, combine sauce ingredients in a small saucepan; bring to a boil. Remove from heat; stir until smooth. After first 30 minutes of baking time, remove cover from chicken. Pour sauce over chicken and bake 30 minutes longer, basting occasionally.
